Pre-infusion
Pre-infusion is the initial stage of espresso preparation in which the coffee puck is gently wetted before full extraction pressure is applied. Even wetting helps reduce channeling and promotes a more balanced extraction.
Depending on the machine, pre-infusion may be controlled by time, flow or low pressure. Its effect also depends on grind size, dose, tamping and coffee freshness.
