The piston is a moving part of the lever group head that, when the lever is pressed, pushes water through the coffee puck and creates the pressure needed for espresso extraction. Its movement inside the cylinder seal directly affects the pressure and speed at which water passes through the coffee.

A worn or scratched piston loses its tightness against the group cylinder. This shows up as water leaking around the group, fluctuating or insufficient pressure, uneven extraction, and a change in coffee taste - it tends to become more watery or bitter. With greater wear, the lever's movement may become jerky or heavier.
