What an airtight coffee canister is

An airtight canister is used to store whole bean or ground coffee away from air, moisture and light. When closed, the inner lid presses directly onto the surface of the coffee and pushes excess air out of the container, slowing down oxidation and loss of aroma.

Signs of improper storage

If coffee is stored in a leaky or damaged container, it loses its aroma and flavour more quickly, the beans lose their oily sheen, and ground coffee can become damp or pick up odours from its surroundings. The result is a flat, less flavourful drink regardless of how well it is brewed.
